Since 1905, the Descombe family has built its history in the heart of Beaujolais, at the foot of Mont Brouilly. Today, the family cultivates its vines in Beaujolais and Burgundy.
Located in the Yonne department, the Chablis vineyards run alongside a small river, the Serein. Domaine Passy le Clou, owned by the Descombe family, now comprises 21 plots scattered throughout the Chablis region, each vinified independently to best express the terroir.
The grapes undergo strict sorting upon arrival at the winery. Pressing is carried out using pneumatic presses (very low pressing pressure) to avoid any risk of compromising quality. Static settling takes place for 24 to 48 hours. Fermentation occurs in temperature-controlled stainless steel tanks. The wine is aged on its fine lees for 15 to 18 months.
